Who doesn’t know the moment when you just bought a new glass of a delicious spread and it’s already empty again? As tasty as they are, our purse isn’t the biggest fan of these delicious but mostly super expensive spreads. But I am, and I’m a student as well which means that my account is happy if I don’t spend masses of money for food. (What I’m doing anyway – welcome to the life of a food blogger! ;)) I got inspired by the spreads I always love to buy in the supermarkets and was shocked how much cheaper you can produce an organic spread at home! Super tasty and full of delicious and fresh ingredients.
This spread is my favorite- I don’t only love the autumn colour but especially the taste! It contains cashew nuts and chickpeas, carrots, garlic, herbs and… ginger! Ginger gives it a very special flavor and is an amazing booster for your immune system which helps your body to stay fit during this snuffy time.
In addition with the other ingredients you get a delicious spread for your bread. I love it stacked with vegetables like cucumber, tomatoes, carrots (but they’re already part of this recipe ;)),… This means that my slice of bread can easily become too big to eat. 😀 You can also use it for wraps or as a dip for sweet potato fries.

If you’re living alone or know that you won’t be at home during the following days it makes sense to use half of each ingredient. Store in the fridge for up to one week. Best, Maja 🙂
- 30g cashews, soaked in water for 2-5 hours
- 140g (canned) chickpeas
- 60g carrots
- 5 tbsp sunflower oil
- 1-2 tbsp juice of a lemon
- 2 tsp water
- 20g ginger
- 1 clove of garlic
- 1 tsp curry powder
- salt & pepper
- Super easy! Blend cashews (without water!), chickpeas, carrots, sunflower oil, water and juice of lemon until it's a smooth mixture.
- Add the other ingredients and season everything with salt & pepper.
