Avocados are one of my all time favorite vegetables. Not only because they’re super healthy, but also because the taste is amazing and there are so many ways you can use them! Making a pesto out of them is only one of many possible options.
Some weeks ago I started a little cooking session with a friend who has been to Italy for a semester abroad and learned some delicious and typical italian cooking skills. I was lucky enough to have the opportunity to learn one of them. On that evening she showed me and some other friends an avocado- arugula pesto. I changed it up a little bit and it’s delicious! We had it with some pasta and wine and it tasted so good!
I don’t know why I never came up with a pesto recipe earlier, it wasn’t the first time that I noticed how much I love pesto. And I’m not talking about the pre-prepared pesto you can buy in almost every supermarket. I’m talking about a homemade pesto where you mouth already starts watering as soon as you see it!
I think there are (primary) three different kind of families: The pasta families, the potato families and the rice families. We’ve always been a pasta family. (And no, that doesn’t mean that we had pasta every day! :P) Even though some of you might perhaps think pasta is something “bad”, I really don’t think so. Of course you shouldn’t eat pasta the whole day, but your body needs carbohydrates and pasta is a great way to give your body the energy you need. Just make sure you buy whole grain ones- It will not only keep you satiated longer but is also a healthier version. Well, that’s enough of that! I’m not an expert and don’t want to lecture you! (:
What I actually wanted to say is that I have always loved pesto. When I still lived at my parents place they always bought the BEST homemade market pesto and even now they have to buy it whenever I come home to visit them. (Actually I even take a huge bowl with me when I come back to Halle haha)
Even though I didn’t manage to make a pesto that tastes like my always loved homemade market pesto, at least my friend inspired me to a different, but just as tasty, pesto: An avocado- arugula pesto.
Since my mum got diagnosed with a gluten intolerance some years ago, being a pasta family got kind of complicated. (; BUT we found some delicious alternatives like lentil penne or zoodles we can enjoy our pesto with. (challenge completed haha) So if you also suffer with a gluten intolerance that might be some alternatives. The pesto is gluten free and vegan (optional) as well!
- 2 large and ripe avocados
- ½ bunch of parsley
- 40g aragula salad
- 70g grounded almonds (140g for vegans)
- 80g parmesan (opt. for vegans)
- 1 garlic glove
- 5 tbsp olive oil
- juice of 1 lemon
- ½ chili pepper
- salt & pepper
- Core the avocados and cut it into little pieces.
- Chop parsley, arugula salad and garlic until they’re really small and mash everything with a fork.
- Add the rest and mix it together. Season everything with some salt and pepper.
